Looks good. How much vanilla and cocoa are you planning on using? You could also try cocoa nibs if you can leave it in secondary for ~1 month.

Yeah, and I just had another due to not having a manifold for AG, but that's now fixed! Everyone at work has been nagging me to brew some beer, so it's time for some brews. I also still have some elderflower in the freezer from last spring, so might have to have a go at an elderflower wine. :)

Hey dude,

Im just recently getting started in the homebrew scene. I wanted to register on the Aussie Home Brewer website but unfortunately you have to do it manually and also the link provided does not lead to an email address to add me manually.

I was wondering if you could help. As I would love to get onto this site and learn.

Hi JDub,

The comments above are DrSmurto's, as it's just a copy/paste from the homebrewandbeer.com forum. However, my most recent ginger beer was this one:

http://helms-deep.cable.nu/~rwh/blog/beer/?p=364

It was good, though quite thick and dark coloured. To be honest, if I did it again I'd sub out the Coopers kit for a kilo of sugar or something as I don't really like the artificial sweetener's flavour.

LDME = Light Dry Malt Extract.

Good to know about the hotter grade ginger! Very interesting. :)

So, did you ever do the LME (Liquid Malt Extract) version of this recipe? I've been thinking about doing that myself, when I stumbled on this post! Except that I am planning to go 100% LME. Oh, and by "LDME" do you mean something more like "L/DME," as in "Liquid/Dry Malt Extract"? I've never heard of LDME...

Also, I have a friend who worked for a local fresh bottled Chai company, and he told me that there are several grades of ginger. He said that if you investigate shops in a proper China Town, you could find a source for the "hotter" grade ginger, much better than what they sell at the typical grocers.

This is an absolute ripper of a recipe, one that became a staple for me when I was still living in Australia. Substituting in a 1.5kg can of dark malt will be fine (because it's around 20% water anyway), and I'd leave in the honey if I were you because its aroma blends nicely with that from the Cascade.

Enjoy!
